HRT 281 - Professional Cooking I
You have to take this no matter what if you're HRT, and I would say he was the best teacher for the course-Im really glad I took him!
Pros: Brown is probably the most fun teacher to teach this course! He is so nice, and really understanding and helpful. He tells funny jokes and really takes the time to get to know you.
Cons: I felt that his quizzes were a little hard to study for. You pretty much study the slides, but I always find questions that I did not remember the answer to no matter how hard I study.

If you think you are an AMAZING cook you'll do great in the class. If you think you are a decent cook you will soon realize you suck and spend a lot of time depressed. If you don't know how to cook and are an A student, I would highly recommend making CAPS appointments while enrolled in his class. He expects everyone to be pro chef's, so my heart goes out to all of those who can only do microwaveable foods. He is also EXTREMELY rude!!! IF you mess something up he will make you feel so guilty and bad about it. He's just plain old mean! He also loves putting you on the spot about Mise en plas, and almost gets disappointed if he doesn't succeed to make you feel bad. Unfortunately he's the only one that teaches 281 these days, but if someone else ever teaches I would highly recommend the other professor. Grade Received: B

Pros: He is very knowledgeable and have a fun fact to say about every point he has to talk about.
Cons: He is quick to judge and keeps grudges. He is very messy when demonstrating exercises and is very unforgiving when you find a different way or cannot perform to his standards.
If you have thick skin or can lay low during a class, this is the professor for you. He is very knowledgeable and he definitely let's you know it. He is very talkative during classes and has fun facts and tries to lighten the mood of the classroom. But when it comes to the lab portion of this class, his demeanor changes. He is very quick to judge if you make a mistake or do something he deems wrong. And when you have done something wrong, it definitely stays with you. A friend during the class used the wrong pastry dough when making desserts and on the next practicum, got one of the lowest grades in the class for problems that others got high 80's or low 90's for. He also is quick to tell students they are stupid or call them names.



Summary:

knowledgeable

class is fun

If you make a mistake, you will regret it for weeks

if you don't meet his standard, you will regret it for weeks

practicum grades can change in a split second



Overall I will no longer be taking this professor anymore

Very interesting course. He is very knowledgeable about the subject. There are two tests (midterm/final), simple small projects, and a group paper/presentation. Take good notes, all test questions come from the lectures. The group paper/presentation will be one of the most important part of you grade (make it fun and don't just read from your paper). Professor only requires a cheap book because you will be spending some money for the class for the small projects and group presentation.

I know this class is optional but it is valuable info for our major. And this prof is one of the easiest I have had.

}It really is your own fault is you fail this class. There are 700 points. Five quizzes and a final and one small project I did in a day and he gives you weeks to do it.

}There is plenty of extra credit too. Read and go to class. Before each quiz he goes over the info. Grade Received: B+

This was the most laid back class I have ever taken. The midterm and test were take home, and his lectures weren't too boring. The only hard part was the power point presentation. It was very hard for a group of 2 to make a 20 minute presentation. Chef Brown is such a cool guy though, he even made us strawberry crepes on the last day of class! Grade Received: A

Great class, and a good professor. The test are not hard if you pay attention. One project, but it is not very hard. He make the class interesting, and helps you learn. I would recomend it to anyone. Grade Received: A
